Currently a Spark flier and I like the camera results, both stills and video, but curious if the Mavic Pro 2 and Mavic Zoom are any better in that regard. I like their close to 30 minutes flight time but if their cameras are no better than the Spark's, I'll learn to live with its close to 15 minutes flight time. Thanks!

There is a huge difference in the cameras and their photographic ability.
The Spark has the smallest size sensor in this diagram.
The M2 pro has the orange one >4x bigger.

Technically the Mavic 2 is much better, however getting the best from it is a learning curve, and can be somewhat demanding due to the increased file sizes especially video.
Like in other photo and video situations the camera ability is mostly rather secondary to your own 'eye', processing options - and above all being somewhere reasonably interesting.

I wouldn't agree that "being somewhere reasonably interesting" is above all as a photographic consideration.
Any klutz can take bad photos of interesting places and attractive subjects.
Without good photographic technique and sense of aesthetics, it doesn't matter how wonderful your subjects are.
