Flight Altitude Setting and Distance Setting

Let's say I program in the Go4 app a maximum altitude setting of 300 feet.

What happens if the Mavic reaches 300 feet and I'm still trying to go beyond that height?

Does the aircraft stop at 300 feet and hover or will it go into RTH mode?

You will get a warning maximum flight altitude reached. You can continue flying but it will go no higher.
I often reach my max height whilst flying forward, and it just warns me and continues forwards.
