I may be asked to do a follow bike video at some point, and probably would’ve made the same mistake.
So if you set RTH to Controller location, will that be remembered for the entire flight or need to be updated? Thnx.

Setting RTH to where you are when you want to bring the drone back will not prevent the problem the OP had.

I set mine to "hover" instead of return when flying from a boat. No more homepoint. Setting return to the remote only works if the device has gps. My iPad minis don't. Rescue jacket's a good idea if doing this often.

Are you confusing RTH with Loss of Signal options?

The only option you can set for RTH is RTH height.
Hover is one of the options you can set for Loss of Signal

The problem the OP had was low battery RTH.
When he had gone far enough from the home point that the battery level was close to only just enough to get back there, the drone did as it was programmed and attempted to return to the launch point.
This was not a loss of signal incident and having set LoS action to Hover would not have prevented it
