Is there anyway to record the HUD display while flying?

Easy on Android with apps such as AZ Screen Recorder. I record every one of my flights with this.

Not so easy on IOS, as they're not allowed in the App Store. Some people use Airshou, but reviews are mixed, and there's no guarantee they're not gonna steal passwords and other information by recording what you type.

Actually H.U.D. is heads Up Display , the Mavic uses a O.S.D. , On Screen Display to show all flight related telemetry .

I have no idea why they have not done this already. Not only does it help us but it helps them if they want video proof of an event.
