For the past 3 months, I've been doing imagery data collecting of a construction site with my DJI M2P for a company that does post processing mapping. Can the same skills and software be used for aerial roof inspections?

While you can certainly still do a mapping flight of roofs providing a quality RGB inspection, most roof inspections require a comprehensive thermal inspection that would pick up any temperature anomalies indicating possible issues.
