For everyone here in the UK, what ND Filter strength do you use the most ie. ND8, ND16, ND32 for our British weather?

We get similar weather on Vancouver Island but it really depends on what you intend to shoot or record. I grabbed an ND 2000 for mid day long exposure photography. For video you'd be looking for something much less so you can use a shutter speed that's double whatever frame rate your video is recorded at.
 
i have ND8s on both my drones which seem to work well with the changeable weather conditions we get here

Weather really doesn’t determine which ND filter to use. The ambient lighting during the flight is the only relevant factor. Use the filter appropriate to get the shutter speed you desire, based upon the ambient lighting at the moment.
