I am new to this Mini 5 Pro, and I really like this drone.
I have shot about four videos so far.
I have the RC2 controller.
I can see all the data on the screen while I am flying the drone.

Is there a way to see or retrieve that data after I am done flying?
I am referring to the height, speed and the other information that was displayed on the screen while I was flying the drone.

Your drone records all the data from each flight.
Explore the app and you can see a list of all flights, like this (from a different app so it looks a little different).

You can tap on any flight and get a replay or you can look deeper into the data by using the Phantomhelp log viewer.

Turn on RC2 controller, but not the drone. Select "Profile. Then select (at bottom left) "More," That'll give you a list of your flights. Flights are identified by date and time. Select a flight to display its route map. On the map, there's a cursor showing the location of your drone, a time/progress bar at bottom, and an option to select 1X, 2X, or 4X playback speeds. As the cursor traces the route of the flight, readouts at the bottom left will show distance and altitude. That's how I can retrieve flight information for my Air 3 on the RC2. I assume it would be the same for your Mini5 Pro.

Thank you, that is what I was looking for.

For video, you can enable subtitles in the Fly app to create .srt files which contain key flight data. With some video players, the flight data is displayed on the screen during playback when the .srt file corresponding to the video file is in the same directory.

If you delete or format and unbind does DJI have a way to see any flight data?

DJI can only see your flight data if you choose to upload it to their servers.
Unless you do that, DJI have no idea if, when, or where etc you have been flying.
