I understand the Mavic camera does not have an apaturere....
What does EV control? Do not understand the -1 -2 etc. Also how do you change shutter speed in flight...

A lot to learn! Point me to videos about this subject!

You are correct, no aperture. When necessary, the ND filters take the place of aperture.

EV, controls either shutter, or ISO, to achieve a level above, at, or below optimum exposure. The -1, -2, etc is in stops. 1 stop = 2x, or 1/2 the exposure.

You change the shutter in camera settings, by switching to manual mode.

There are tons of material on youtube, simply search for basic video theory.
 
EV in its simplest is basically the exposure,use the Histogram and keep the peaks centered if possible unless you want a darkened or lighter image,shutter speed is generally set at half the frame rate unless your taking a photograph where you want a slow shutter speed to blur the image,ex. waterfalls,waves,car headlights,fast shutter speeds for fast moving objects,but for video set half the frame rate,30FPs=60 shutter speed,60FPS=120
