I am looking for various tried and tested, safe stick (or wheel?) cross control flight maneuvers for landscape shots. RC, RC Pro, M3, M3P.

And the related question is how to make sure the rotors are not accidentally stopped mid flight by inadvertently bringing the sticks down inward/outward.

what exactly are you wanting to learn to do we would be happy to help..just kinda give us more of a description.
2. DON'T inadvertently bring the sticks down inward/outward! I cant think of any time that would happen really and I fly FPV.
If you are using movements that large you are way overcontrolling your drone.

The classic would be a poi orbit, where you point the drone at the center of the circle, then fly sideways around the circle keeping the drone pointed at the center. No danger of commanding a shutdown in that maneuver.

The other very common control config is camera pointed down, slow climb with slow rotation (yaw).
