Why does EV change during flight?

I understand how automatic exposure works but after setting my camera to manual, like all the pros suggest, my exposure is still changing automatically while flying..Doesn't setting the camera to manual "lock" the exposure so its doesn't change?..I'm confused on what auto does vs. manual on the Mavic

It locks indeed... but the meter shows you scene / light changes.
