I regularly hand land my MP. I hover 2 feet above then initiate landing and it lands on my hand. Simple. If you try to hold it and THEN initiate landing, it will fight you.

I totally agree with this suggestion - if I saw an estimated wind speed of say 30kmh I would take a lot of notice. Instead I get a “High Wind Warning” most times I fly, which I ignore after checking that the MP is not struggling.

The movement you are seeing is the gimble initializing on switch on. This is normal and it is the gimble doing a self test. after that initial movement, it should stay still.
