This is known as channel mixing used in rc models.
The controller can be programmed so when you use the rudder(yaw) stick, automatically feeds some percentage of aileron (roll) input to make the turn smoother.
Simulators also implement yaw input differently during forward fly. RealFlight seems that it banks a little while Aerofly doesn't.

Forgetting the camera/gimbal behavior,
banking the aircraft itself is usually the result of roll movement (moving the right stick left/right) no matter what the gimbal mode is (follow me/fpv).
Yawing (moving the left stick left/right) must never bank the aircraft even in fpv mode.

Exactly. You move forward and the drone goes backwards. That's why it is preferable to launch from the rear side of the boatd to avoiding hitting anything over the boat.
