Boat on water- overexposure?

Have you experimented with shooting RAW only in single shot mode rather than 3/AEB?
Yes .. back in the past, but I can't see any advantage over the technique that I've refined over time.

No, you obviously don't need too. you are getting great results from the original JPGs.

As long as you touch the boat, you'll be okay -- the exposure stays set until you touch again, so it should still be right for the boat even if it's moved.
When tracking and composing with a fast moving subject, there's no time to take hands off the joysticks.
