So if your Ipad Pro had cell service, would that be a good option?
I'd probably use it then, the lack of maps felt like a genuine disadvantage
I just can't justify a data plan simply for flying with a tablet

Mly tablet doesn't have cell either. I learned to load the project at home over wifi before hitting the field.So if your Ipad Pro had cell service, would that be a good option?

So turn off WiFi on my phone when I fly? Why would I want to cache maps prior to flight if Litchi is not available (yet) for the Mini? I used Litchi on my Phantom 4 Pro V2.using wifi on the controller device (cell/tablet) can create interference and reduce your effective range. Try to cache the maps, or try Bluetooth for internet access from your phone to tablet.
