How stupid is it to fly with out app?

Fly it. Keep it in sight and have fun. RTH and cancel buttons will work and you have battery strength, speed, distance, and height readouts on the RC. Everyone should feel confident flying without a phone/tablet because if you have not had the app crash or device die, you will. Think of it as practice for when it happens.

What happens if app dies and you only have RC working...and you for good reason have to now change your RTH point or else you will not have enough power to go back to the original RTH point? if it crashes or gets lost are you SOL b/c DJI will not warranty the damage b/c they don't care if their software works...I've read that they officially do NOT warranty their software...!!

To answer your question, the only way I know to set RTH without the app is to land. Of course, landing will be hard to do safely without a visual or camera view.

There really is no "good reason" to not have enough power to get back to the original RTH point. There are, however, a number of bad reasons you cannot make it back, with ignoring low battery warnings, failure to gauge wind speed and direction, and flying beyond VLOS being the greatest of them. There is the possibility of mechanical or battery malfunction that would prevent you from returning but if you are flying within VLOS you should still be able to control it.

As soon as the app crashes and you lose video is the time you return. Assuming you were not flying after being notified that the battery only had enough to RTH you should make it back either by pressing the RTH button or flying visually. While it is returning you can try to restart Go 4.

My point was you need to be able to fly without the app because the app may/will crash or your display device may fail. Confidence in your ability to fly without a display can counter the panic that tends to set in without it.

So I pick my kids up from school...I got here early today to get some fly time in around the soccer fields. Anyway, I realized I left the stupid phone I use to run the DJI app on,charging at home. It’s it a real bad idea to fly without it? I’m not looking to record anything obviously, just do some low altitude hot laps. I don’t have enough time to go home, get the phone and come back. Should I just stay grounded?

It’s your choice but I wouldn’t

Just fly it with no app or secondary device. The controller does all the flying anyway, the app just gives access to visuals and special flight modes. Stay within VLOS which is recommended by most authorities anyway and enjoy.
