It's Cockney rhyming slang. Quite a complicated one even for us Brits. It goes:

'Arris' = your arse (*** in USA) which come from Aristotle / Bottle. Usually something like 'Did you see the 'arris on that bird in the pub last night'?

Which originally comes from:

Bottle and Glass = Arse (*** in USA). If your 'bottle' goes it means that you got scared/chickened out of something. Generally means your arse puckered up because you got scared. Conversely if you've 'got a lot of bottle', it means you are brave. As In '**** me he's got some bottle flying through that giant concrete fanny'.
