If you understand how audio canceling works, it receives the ambient sounds and then creates a reverse frequency impedance. Why would it not be possible to isolate the pitch frequency of the whine of the drone blades and match it in reverse? The remaining audio would be absent of that frequency range but perhaps they could engineer the pitch to be in a a place that most ambient sounds wouldn’t be...

I assume by audio you refer to recording audio.
It's the cost of decent noise cancelling that's the negative factor and if it isn't good its pointless.
Generally in a normal flight what audio would you pick up ?
How many would want to pay extra for a relatively expensive feature to be built in to a drone when it’s usefulness would be limited to very few occasions.
 
A lot of drones record audio along with the video. Especially the cheaper ones, I guess because the cameras are generic off the shelf units in a lot of cases.
 
No matter how good the noise cancellation is it won’t stop the physical movement of air that will physically block most of any other sound coming near the mic.
 
Even if you could filter out the drone generated noise, what do you expect to hear?
 
Well I assume you are wanting to annul the drone noise? So a silent stealth drone the result? Many positives in that but what penalties to achieve that? More weight resulting in more downsides?
