At Amarillo divert to Dalhart, Clayton and Raton. Beautiful volcanic fields including Capulin National Monument. Drive north from Capulin to Folsom, then west through Yankee Canyon to Raton. Next, south to Springer, west through Cimarron Canyon to Angel Fire and Taos. Have fun. Watch the weather...if it's snowy and windy, the southern I40 route is safer.
