Aka if you now want to restore say 11.3.0, you would have had to save the 11.3.0 blob while that version was current.
This site offers a service that saves each version for you as they come for $1/month so you don't risk to forget/miss one by doing manually, but that will only help you for future stuff, if you didn't do it before you will never be able to restore an older version than 11.4.1.
As said you cannot restore anything older than current (11.4.1) if you have not saved those blobs at the time they were current. Not even what you currently have on.
