Terrain/area mapping

I've probably mapped 20,000 acres over the past 3 years.

You'll want Dronedeploy to snap the photos and metashape to put it all together.

That's a good combination but if he only wants to map his own property, his best solution is probably to use teh free trial of DroneDeploy and avoid the expense of Metashape for just one small project.

That's right.

It's just for my own property. Anything free?

If you only want to do this sort of thing once, then the Previous suggestions are probably fine, and likely the easiest way to start. Commercial software is more polished than more academic-type Open source alternatives.

If you want to do more than a single run, and if you are a bit of a nerd, then OpenDroneMap is actually great open source software - and free - and It runs 100% on your own computer offline. It produces both 2D (ortophotos) and very cool 3D models as well as digital elevation maps (DEMs). It works via a web interface on your computer, called WebODM. You just drag and drop your images onto the web page running on your own virtual server on your computer, and OpenDroneMap does all the rest. Drone Mapping Software - OpenDroneMap

BUT: It is rather nerdy to install, so it is best if you already know a good deal about computers and software if you want to do it for free. You can buy an installer for 57 USD on the web site to avoid dealing with the most nerdy stuff. However, I guess I did a much better deal by buying the e-book “OpenDroneMap The Missing Guide” for 30 USD. That guide tells you even more than you need to run the system, including all the hundreds of more advanced settings you can use. It also tells you the best way to plan your flights (do use Dronelink or other apps like Litchi to do the drone photo mapping systematically). If you want to understand how the software works, then read the first 100 pages of that book. The Book also tells you how to install the software package, so you save the other 57 USD. There are collections of drone photosets you can start with on the OpenDroneMap web site, if you want to test datasets that work (just in case your own first try at doing the photos does not turn out so well).

Processing substantial areas and doing 3D models takes lots of RAM and computing power, so it is best to have a powerful computer. If you have several hundred images, processing time is counted in hours, not minutes!
