"I have both the Avata 2 and the DJI FPV Drone (Neo). I'm considering purchasing an additional set of goggles for the Neo so a friend and I can fly simultaneously. Is it possible to operate both drones concurrently by assigning separate transmission channels or frequencies to avoid interference?"

You know I would hope so because those Goggles have a super long range and it would be a shame if you couldn't operate a second drone anywhere nearby. ;)

I suspect the separate channel assignment is automatic and dynamic, so that it continuously maintains signal on unused channels throughout the flight.

However, that still won't stop you from flying into each other, which is the biggest risk of buddy flying! Kind of like spear fishing or hunting with a buddy. Friendly fire is always possible. Some things are best done alone.

No problem. I was flying with two friends in mixed configurations of Avata 2 and Neo and there was no problem at all.
As long as everyone is acutely aware of exactly where everyone else is at all times, and exactly where they are headed, no problem. LOL!

Simultaneously sharing the same airspace is inherently dangerous, even with clearly defined separation agreements. Witness all the near misses and one collision at Reagan National Airport, resulting in prohibiting most such flights.

Unlike a couple of camera drones which are less maneuverable and nimble, I suspect a couple of FPVs in the same airspace will have no problem. I've never heard of two FPVs colliding that weren't "racing" because they are often smaller (usually without the wide wings) and so quick and easy to turn and avoid things right in front of them unlike manned aircraft which cannot respond as fast. If you are avoiding a ton of obstacles on the ground using goggles and you're paying close attention to everything in front of you, it's hard to envision anything other than a freak accident. BTW, I don't fly any of my FPV drones without headlights.

When we race we use "Race Mode" to separate channels BUT in your case the problem will be minimal too non-existant.
If you have any interference at all you will see it first in the video, It will start to become laggy or "choppy" as the Drone searches for a good signal to transmit. If you and your friend start seeing Choppy or laggy video returned there's your clue.
You won't have a problem at all.

I often fly with 2 to 3 other "pilots" and never had an issue with transmission problems. However we communicate our positions verbally with one another constantly. A couple of near head on collisions made us realize we need to call out our positions as we tend to shoot a lot of gaps. Not good when you are aiming at the same gap at the same time.

It's only a matter of organisation and speaking to each other.
