I need your help with two quick things:

I was looking for iPhone XS, but seems to be missing. It’s my current phone, although I’m planning to upgrade next fall. Use DJI Fly app for the Neo and Flip if controlling via smartphone. Otherwise using RC controllers in other circumstances where I want more range.
 
I use my iPhone XR with DJI Fly to fly my NEO. It works perfectly, no problems.

looking at those nits numbers, and maybe I'm wrong, but I'm wondering if that was the maximum brightness rather than sustained brightness

for myself, I have been using the 8" Tripltek with 1200 nits of sustaned brightness and a huge battery. Been extremely happy with the brightness and size compared to DJI RC's and a lot of phones

Last year, I started removing outdated devices as some of them weren't working so well with new DJI app releases. The XS was released nearly 7 years ago.

If you are talking about my Moto G84 5G above yes its peak brightness i have to turn on adaptive brightness in the settings to get the best out of it on very bright days.

Indeed! However, that's not the case for many devices, especially Android devices. I prefer to err on the side of caution and avoid recommending mobile devices that might no longer perform well.
 
My XR still works great too even with the latest update but I am worried that a new future update could change that. That’s the risk I run with using an old phone.

My 8-9 year old Samsung Galaxy S7 with Android 8 works flawlessly with Go4 on my Mavic 2, never a glitch.
The same with my newer Huawei P30 and a P30 Pro with Android 10 - best phones I have ever had.
And also the 8" Huawei Mediapad M3 from 2016 works perfect with Go4.
I alwys use the very best and expensive cables bewtween my device and controller.
 
There’s a diminishing return year-over-year on smartphone upgrades now, at least with Apple, that I don’t see the benefit of getting a new phone every year. I’m sure a 7 year jump should see some improvements.
 
Apple typically makes significant improvements every two years, but these updates usually have little impact on how DJI Fly performs.

A 5+ year-old iPhone might technically run DJI Fly, but there are other reasons not to recommend it. For example, the battery is smaller and likely has poor life after so many years
