Hi. What is this yellow circle I get when I tap on the camera view when the aircraft is flying?

it is the place where you focus, if you tap on a dark zone you will see the camera will increase the light

Thanks a lot. And sometimes, I don't really can explain how, I get a big yellow rectangle on my screen. Any idea?

I believe the big rectangle is average light metering over the entire frame rather than spot metering icon as you originally described.

I have to test again but I think it's either clicking on the X in the upper left of the spot meter icon, and/or clicking at the edges of the camera view.
