We all know that discharging a lipo battery to 0% renders it chemically inert and no longer a battery as it will no longer charge.

But DJI doesn't let it get THAT low.

Actually that is reffered to as deep cycling, if you use any service such as airdata that maintains and monitors the health of your drone it is advised to deep cycle your batteries i believe every 20 hours of use.
But definitely not good to do that constantly even thou 0% is not truly 0%.
In the event you ever did run your batteries down to that point a lipo battery would be permenetly damaged. Store at 50% with a setting to discharge within 10 days if unused. Best of luck
