I'm trying to achieve the smoothest videos for active track following me on my bike with speeds up to 20mph.

It seems like when the Air3s switches position (6 o'clock to 3 o'clock) , it drops some frame rates and the video looks choppy... maybe that can be solved in post ? Could it be because there was high winds that day ?

My settings are the default
Format : MP4
Color: Normal
Coding: H265
Cache when recording: ON

I was using the 1x wide lens

Are you using the 180 degree shutter rule? When panning (especially if the subject is close by) you will get that stuttering effect. The 180 degree shutter-(shutter speed = twice the frame rate) i. e. 25 fps 1/50th shutter speed will minimize it but not always eliminate it. To truobleshoot, try a pass in h264 and see if that fixes it. If so, your playback hardware/software is having trouble keeping up with h265... the video is fine.
