Can I connect to my bird while it is folded and the gimble stop is on without damaging anything?

You should remove the gimbal clamp before powering on your Mavic. It won't damage anything, at least if you do it once or twice, I know I have by accident. I certainly wouldn't want to make a habit of it.

When I connected to my mavic when folded I got a compass error (please calibrate) message. As soon as I unfolded the arms this cleared.
Just thought I would mention it in case you panic and unnecessarily calibrate your compass potentially screwing it up.
I always remove the Gimbal clamp before any start up.

It is fine as far as I have seen, but definitely take the gimbal clamp off. The Mavic always calibrates the gimbal when you turn it on, and leaving the clamp on will probably wear the motors out since they can't move. They sell a mount to put your phone on top and carry it like a camera, so you can use the gimbal and camera to take quality vids.
