DJI would not UN-Bind an already registered Drone/Controller

Not in my opinion.

It's supposedly more a matter of the new so called Fly Away Refresh coverage. It requires a specific RC to be bound to the drone account online.

If you don't like this behavior, than next time buy from another manufacturer. This is just only way how dji would listen.

Having same issue brought it from Craigslist and the guy won't return my calls. How do I contact the owner directly. Obviously this drone was stolen

Here's a stupid idea that DJI should do. If the original owner of the drone doesn't sign on the DJI App and log in with the drone for 3 months let's say, the drone should unbind from that account.
