A few useful things to get you started:

• The Mini 2 SE manual can be downloaded here (it doesn't come in the box).
  
  
• You can find other commonly used downloads on the Mini 2 SE downloads page.
  
  
• This video covers all the basics of the Mini 2.
  
  
• Your drone batteries will last longer if you use and maintain them like this.
  
  
• The drone records flight data each time you fly. You can decrypt and view those flight logs with these tools.

What would happen if am flying my drone and someone rings my mobile phone will I lose contact with drone or app ? Will anything happen ?

Since the drone is flown with the remote controller, you will not lose connectivity with the drone. However, you won't be able to see/use the DJI Fly app while you're talking on the phone. For that reason, you probably don't want to talk while flying. Or get a dedicated mobile device to fly so you don't tie up your phone if you need to use it while flying.

If I use a spare phone to monitor video does it need a internet connection. A SIM card ?
