So what is considered Level when dealing with any form of calibration like the IMU?
Is it the normal resting position of the front 2 pads and the 2 rear pads?
Or is there a "surface" like the top that needs to be leveled?
If I were to have a platform and level this platform would that be
considered Level once the Mavic is resting upon the leveled platform?
 
The surface that the Mavic is sitting on should be level.
 
You can download a level app on your phone or tablet. I use this one pictured in the video below. Place level (phone) on a flat surface and see what it reads. You want the x and y to be 0.0 and you have a level surface.

On my racers I have a 3 point leveling setup that using a bubble level on gets me pretty close.
I have some really flat Carbon Fiber sheets I got form work that are within about .005 thou flat
that I can set on top of my 3 point that's large enough for the Mavic.

It doesn't need to be "scientifically" level, only "level enough". I've calibrated mine in the field using a folding camping table, no probs. What's more important, the table/platform must be steady. Basically, calibration collects accelerometer and gyro samples (at hundreds, if not thousands, samples per second) and calculates biases of these sensors; when you put Mavic this way and that way, the unlevelness of the surface is cancelled out.
