Does the Mavic 2 Zoom have it's own GPS recognition (Sensing) system or does it use the one on my phone. If the Mavic does have the GPS unit installed, can I disable it for selected flights?

The Mavic has a GPS antenna. The RC does not and uses the one on your phone/tablet. You can disable it on the MP/MPP by covering the area aft of the battery with foil. Not sure about the M2.

In both M2P and M2Z the GPS is just in front of (fore not aft) the battery. Its the white square unit labeled DG304 in these photos:
