I wonder of the more recessed position of the camera/gimbal on the Air acts sort of like an aftermarket lens hood on a Pro? Ie. limits direct sun light from certain angles to cut down on glare, etc.

Maybe a bit, but as a counterpart you lose some gimbal movement range and thus speed/agility.

Yup.
I'm wondering if the more shielded/shaded camera location on the Air is the cause of the crisper image rather than the camera itself.
In other words, when both birds are set up manually, with proper settings (and/or filters or hoods) we might not see such a difference?

Very possibly but I suppose part of the attraction of the Air is the ability to get good quality images by default with a very portable package!
