Whenever I take a picture, it's too small...

The image sensor may still be exposed to the full image, but it isn't capturing it. Post-processing or not, the image is being cropped and resolution is being lost and cannot be recovered, even if you're shooting in RAW. The data simply wasn't "captured" in 16:9.

Actually not true bud. If you shoot in jpeg, you are correct it is lost. But if you shoot in raw, it captures all the data from the sensor. You can choose to revert or not in post processing.
 
If you have an aspect ratio of 4:3 and an aspect ratio of 16:9... the yes, it is arranged differently. The ratios of vertical to horizontal lines are different.

"arranging differently" would suggest some pixels would be put somewhere else, or that they'd be manipulated like in older anamorphic system where pixels have a non-square aspect ratio, which is not what happens.

Incorrect. A Mavic RAW shot taken in 16/9 mode is cropped at the source, no way to recover the extra data.
Did you even take the time to verify what you're saying??
