Any advantage to use a cellular iPad???

even though there is no cell service associated with the tablet.......

If using an Apple device, you'll be able to use features that require GPS on the mobile device.

Not much

Apple only fit cellular capable iPads with a GPS receiver. Wifi only iPads don't have GPS.
Your Phantom uses its own GPS receiver for almost all flying functions.
There are only two features that can use the GPS in your tablet.
These are:
1. Follow-me flight - needs to have GPS location of the person being followed.
But Active track works better and uses optical tracking rather than GPS
2. Resetting the home point to the current location of the controller.
Used when flying from a moving car or boat.
But resetting to the current location of the Phantom doesn't need GPS in the tablet and it's usually just as useful.

It will only benefit you if you're using the features @Meta4 mentioned above.
 
Cellular, or GPS? You can use Wi-Fi to download the data. However the question is if you need GPS to get accurate data for your area.

The only data that GPS provides is Lat and Long location data and time. It doesn't provide any mapping data.
