I know batteries discharge over a week or so to 60%.

If I’m not sure when I will be flying, should I leave batteries plugged in.
 
It’s a big NO there, you will fry your batteries that way. storagemode is the way to let them last as long as possible.
The charging time isn’t that long and you must have some planning before flying anyway.

Discharge does not begin until 10 days after you charge to 100%, might lose 1-2% during that first 10day time but no more.
