Good evening & Happy New Year to all

My questions is this about mt Mavic Pro batteries. I have (3) batteries and I am following the said processes of flying and discharging them but there are times where I can't fly for a few weeks and my batteries get very low, like 1 flashing LED on them. I would like to know if it's "OK" to charge them back up again to say 50% and leave them until the next time I will fly and fully charge them before I go out to fly?

Yes, you should charge them back up until at least the 3rd light starts blinking. Charging them beyond that will just cause them to auto discharge back down to the storage level (right around when the 3rd light starts blinking).

The batteries are 'smart' enough to know what their best storage charge is, so they will discharge over the period you have set in Go 4 ... There is no need to charge them up to 50% ... Put them on to charge (to 100%) the night before you are going out to fly.
If you charge to 100% after a flight, then the battery will do the discharge-to-rest after the period you have set in Go 4 - and meanwhile, if you get that opportunity to fly, you'll have a good set of batteries.

The OP said the batteries have a very low charge (1 light) and it seems they are not going to be used again for an undetermined amount of time. Continuing to store them outside of the range in the red box below could permanently damage them.

Lipo batterys should not be stored full or discharged. As has been said, it's a smart battery and should only discharge to a storage voltage. I always charge them to 100 % after flights.

Thanks everyone!!
Usually the longest I have gone without flying is around 3 weeks just because I am always busy. So my concern is what do I do in this situation for my batteries

Don't leave them in low charge.
At least charge them to about 60%. You can also charge them to 100%, and in up to 10 days of being untouched, they'll discharge to about 60% for anticipated long term storage.

I always fully charge my mavic batterys, because with racing drones, you shouldn't interupt the charge, because the Cells could be at different voltages I also have my discharge set at 2 days because even 2 days is bad. I realise racing drone battery's are not smart, but I suspect the way they charge is the same. It's a shame the Mavic doesn't have a storage charge option.

This is not the case for Mavic batteries. It's okay to only charge them to the storage level (when the 3rd light starts blinking).
