I'm looking at the Huawei mediapad M5 and I've noticed that there's an M6 available. It's 8.4 with 3 GB as opposed to M5 @ 4 GB Ram. Anyone using this new model.

Well I know that the M5 is compatible, but not sure about the M6. As far as I can see there's only 1 GB ram difference. The six is Android 11 with 3 GB ram.

I don't have experience with that brand, but I'll comment that the "compatible" list isn't a true comprehensive list. It includes devices they have tried and determined to work, but they don't do an evaluation of every device made. Absent having a "non-compatible" list, it's possible that a device may work - neither my phone or tablet are on DJI's list and both work fine. There are user-sourced lists out there.
