As a new pilot my confidence is low. I am going skiing soon and I can't understand how the drone will calculate how high it is when landing as the snow doesn't have any definition.

The drone has a barometric sensor, which it uses to calculate Its height relative to the point of take off ( Home Point ). If you mean how will it land on soft snow, then that is a different question.

I would advise that you carefully checkout the regulations for drone flights in the country you will be skiing in, especially any regulations for overflights of the piste or chair lifts, some countries are very strict, wouldn't like to hear that your drone was confiscated, and you were in the nick...

Use a landing pad so there is contrast to the snow .
 
Learn to hand launch/land and keep high enough to miss the trees.
