So I noticed mavic 2 .mov files are Thrice! the size of MP :|

What is the biggest size Factor. MP4 vs .MOV?
or .264 vs .265

I guessing mp4 .265, but does the Quality suffer?

.mp4 and .mov are near enough to the same since there is no difference in what's recorded.
It's just inside a different wrapper.

As @Meta4 says, the container is not really a factor. The biggest factors in the file size are the resolution (HD, 4k etc.), the bit depth and the codec (H.264, H.265). The Mavic 2 offers 4k, 10-bit video, which is a lot more data than regular 4k, and is only available encoded with H.265, which is significantly more efficient than H.264.

I know .265 can lag on slower hardware..

Is there a discernible difference between in image quality between .264 and .265?
Or is it more a compatibility thing regarding playback on different devices?

H.265 is roughly twice as efficient, and so for similar quality an H.264 file, on average, would have to be twice as large. Or for similar size files, the H.265 file will contain more extractable information - i.e. it will be higher quality.
