Stitching together top-down photos?

Hi everyone... I need to get top-down images of an oil refinery that is about 1,200 feet long, by about 800 feet wide. I'm pretty sure that's too big for a single shot from below 400 feet, so I'm trying to figure out how to do multiple shots and stitch them together, similar to the pano modes in the DJI app. Anyone have any recommendations? I understand Microsoft ICE will do the stitching, but how do I go about getting the shots so that I have sufficient overlap? I'm on Android, btw, so I can't use GroundStation.
 
There are numerous apps - Try Pix4D, DroneDeploy, MapsMadeEasy or Precisionmapper
