I've seen numerous references to being able to hack the early MPs (M1P, MPP, maybe the M2) to fly past the normal parameters.

In fact a quick Google search found much info on this, Youtube, on the DJI forum, and including 2018 posts on the MavicPilots forum here . . .

It was just for curiosity, of course I wouldn't do this with my Mavic 1 (especially considering that I don't have one).

A few people made fakes / stripped the internals and put DIY equipment in the Mavic shell back in the day.
But you could also edit params and flip it into manual mode IIRC.

Whilst I have no interest in flipping such a drone, does anyone know what the telemetry projection software is?

Doing flips is most probably against the “rules” anyway.
