My general settings menu is missing options.

Some stuff has been moved around to different menus, so without knowing what you're actually looking for...
 
Which version of DJI GO are you running? Did you try reinstalling DJI GO?
 
Try reinstalling the current version of DJI GO 4.
 
Did anything notable happen in between now and the last time you saw all of the menu options?

I turned off the landing protection and switched from my iPad mini 2 to a large screen iPhone 6s. I tested the iPad last night and still could only see 2 options in the general settings.

It used to fly just fine but error messages use to pop up saying I should only fly within 30 to 50 meters of the home point. This was a couple days ago before I updated to the latest firmware. I don't see that overlay message anymore. However, now it wont let me change to sport mode and says I have to activate it in the main controller settings which I think leads to my first problem.
 
Have you got things turned off? More options appear when stuffs turned on see below

I know I have landing protection turned off but I can't turn it back on because I'm not giving an option to turn it back on. The screenshots you posted show options which are not available to me.

Are you able to see "About" at the bottom of the "General Settings" section? If so, which firmware version is listed for your Mavic?
 
How many remote controllers/goggles do you have paired with your drone?
If you have more than one remote, only the primary remote has all options available in the app. Secondary remotes have limited options inside the app.
I'm using the second controller paired with my mavic. However I turned off the landing protection with the second controller and not the first controller.
 
Then that's your problem, most settings are only available on the primary controller so that the trainee/camera operator can't change them by mistake.
