What is your opinion of using 3rd party flight apps to log Airdata automatically without sending to DJI cloud when using a iPhone. I guess my question really is which is the better choice.
 
I would avoid synchronizing with the DJI servers until you have retrieved, or decided you don't need, the associated mobile device DAT files. Synchronizing to third party systems won't affect the DATs.

Are the DAT files on the mobile device the same as the DAT files on the drone? As I understand, DAT files are encrypted, at least in the newer models like Mavic Air.

Yes - with the DJI Fly app (iOS and Android) and the DJI GO 4 app (iOS) - synchronization deletes the mobile device DAT files.

No - they are different, and the aircraft DAT files have not been readable on any models newer than the Mavic Pro.
